Add a little bubbly to the juice to make a refreshing and delicious mimosa that’s perfect for brunch, a special occasion, or a langorous afternoon in the sun or poolside.

A mimosa is such an easy cocktail to make, but it feels so indulgent and fancy.
The simple flavor combo is amazing, especially with these POG Juice Mimosas. The juice is much mellower and less acidic than orange juice. Its sweetness is a nice contrast to a brut champagne.
Did you know? The mimosa was created at the Ritz in Paris in 1925 and named for a tropical flowering shrub, according to Difford’s Guide.
While you can mix up a pitcher of POG mimosas just before serving them, I like to make mine by the glass. The stay more bubbly that way, and I love the showmanship of pouring the sparkling wine into a champagne flute.
Champagne flutes are essential for mimosas. I suppose you could use a coupe or another glass, but the presentation just isn’t the same! Fluted glasses also help preserve the carbonation in the champagne, prosecco or sparkling wine.

🥂 How to Make POG Juice Mimosas
- Use chilled POG juice and champagne: Mix up the homemade fruit juice ahead of time (get my POG Juice recipe here). Chill it and the champagne in the refrigerator for at least two hours (or preferably overnight) before making the mimosas.
- Pour the POG Juice first: I like to start by adding the POG juice to the champagne flute first, filling about halfway. Use a chilled glass, if you like your mimosa extra cold.
- Add the champagne or sparkling wine: Next, pour in an equal amount of bubbly, being careful that it doesn’t overflow the glass. Traditionally, mimosas are made with brut or extra brut champagne to balance the sweetness of the fruit juice. But you may prefer a sweeter sparkling wine.
- Garnish: Cut a thin orange wedge and place it on the rim of the glass. Alternately, you could rim the champagne flute with orange-flavored sugar before pouring the champagne and juice.

📖 Variations
Since it contains only juice and champagne, there aren’t too many swaps you can make to this POG Juice Mimosa recipe. But here are a few options:
- Change the ratio: This recipe calls for equal parts of champagne and juice, but you can use a 2:1 ratio of champagne to juice to make it a POG Buck’s Fizz.
- Make it a mocktail: If you want to make a nonalcoholic version of this drink, use sparkling grape or apple juice instead of champagne. Or substitute flavored sparkling water, sparkling soda or sparkling juice. Try a complementary tropical flavor, such as pineapple, mango or even coconut.
- Add sugar to the rim: Try addiing orange sugar or another flavored cocktail sugar to the rim of the champagne flute. (This Citrus & Petals Cocktail Sugar is a fun choice.)
- Switch out the champage: Mimosas typically use brut or extra brut champagne because they have less residual sugar. If prefer a slightly sweeter mimosa, choose an extra dry or dry champagne. Prosecco, Cava and sparkling wines also work well.
- Add a splash (or more) of booze: Add a splash or up to ¾ ounces of Grand Marnier or another orange liqueur to the mimosa.
