These baked jalapeño poppers, stuffed with southern-style pimento cheese, are ready in less than 15 minutes. The spicy, bite-sized poppers make a great party appetizer or side served with burgers, grilled food or your favorite Mexican dishes.
These baked jalapeño poppers deliver lots of flavor without a lot of time in the kitchen.
They’re ready in less than 15 minutes — probably more like 10 if you’re quick in the kitchen. And you can prep them ahead of time and throw them in the oven when your party guests arrive.
The pimento cheese will be melted, oozy and browned after about five minutes under the broiler.

If you’re pinched for time or don’t want to go the from-scratch route, you can also use your favorite grocery store brand of pimiento cheese.
They’d also be delish stuffed with my fancy gourmet pimento cheese spread, which I always like to serve at parties.

I also think they make a great side when you’re serving burgers, barbecue chicken, ribs, steak or other grilled meat. You can also serve them as part of a Mexican spread. They’d be great for Cinco de Mayo, along with calabacitas salsa and a jalapeño-infused bourbon limeade Don’t forget the margaritas popsicles and margarita pie for dessert!

To make the pimento cheese baked jalapeño poppers, begin by washing and sliceing jalapeño lengthwise. In the grocery store, look for larger jalapeños that you can easily stuff with lots of pimento cheese. You may want to wear gloves when working with spicy peppers, especially if you’re sensitive.
Use a spoon or knife to remove the membrane and seeds from the peppers. If you prefer a lot of heat, you can mix some of the seeds into the pimento cheese.
Fill each jalapeño pepper half with a heaping tablespoon of pimento cheese.
Place stuffed jalapeño peppers onto parchment lined baking sheet.
Broil on low for 5 minutes, until the pimento cheese is melted and lightly browned. Don’t get distracted and walk away from the oven. Keep a close eye on things, as broilers work quickly, and you don’t want to burn these.
Baked Pimento Cheese Jalapeño Poppers
Ingredients
- 8 jalapeño peppers
- 1/2 cup pimento cheese
Instructions
- Preheat oven broiler to low. Line a baking sheet with parchment paper.
- Slice jalapeño peppers in half, lengthwise.
- Use a spoon to remove seeds and membrane from the jalapeño peppers.
- Stuff each jalapeño pepper with a heaping tablespoon of pimento cheese.
- Broil on low for 5 minutes, or until cheese is melted and lightly browned. Watch the oven closely so the jalapeño poppers don't get too browned.
