Slow Cooker White  Chicken Chili Recipe

Slow cooker chicken chili is the perfect healthy and hearty meal for busy nights.  Made with chicken breasts, white beans,  corn, peppers and tangy salsa verde.

Minimal prep work and cooks in under 4 hours in the slow cooker! A great recipe to make when you need a SIMPLE, healthy dinner!

Ingredients 2½ cups chicken broth 2 cans cannellini beans,  1½ lb.  chicken breasts 1 can diced green chiles ½ cup salsa verde 1 small onion diced 4 cloves garlic minced Continued on next slide

Ingredients 1 jalapeño minced 1 tsp. ground cumin ½ tsp. chili powder Kosher salt Black pepper 1½ cups frozen corn Juice of 1 lime Chopped cilantro

Add chicken broth, salsa verde and green chiles to the slow cooker.

Add onion, garlic, jalapeño, beans and spices.  Stir well to combine.

Add chicken breasts, making sure to cover with broth. Cover and cook on HIGH for 3 hours, until chicken reaches an internal temperature of 165° F.

Remove chicken breasts from the slow cooker and allow to cool slightly.  Shred the chicken meat.

Return shredded chicken to the slow cooker.  Add the frozen corn and lime juice.  Cover, reduce heat and cook on LOW for 15-30 minutes.

Serve White Chicken Chili garnished with sour cream, avocado, and jalapeño slices, as desired.
