Black-Eyed Peas with Ham

Black-eyed peas, simmered with a ham bone, are a traditional New Year’s Day dish. You'll love the hearty, smoky flavor.

Black-eyed peas represent coins on your plate, and they symbolize prosperity and wealth.

Serve them with collard greens, pork or ham, and cornbread. 

1 pound dried black-eyed peas 1 ham bone, ham hock or ham seasoning packet salt and pepper

Wash the beans, removing any sediment. Place in a pan and cover with water. Let them soak, covered, overnight.

Drain and rinse the beans. Return beans to a pot and cover with water.  Season with salt and pepper, about 1 teaspooon each.

Add a ham bone, ham hock, fatback or other pork to the pot.  Bring to a boil, reduce heat and simmer, covered, for 1½ to 2 hours, until tender.

Serve up a big bowl of black-eyed peas as a meal with cornbread.  Add an extra kick with hot sauce or homemade pepper jelly.
