Chocolate Chip Pecan Pie Bars

Words can't describe how good these chocolate chip pecan pie bars are! Basically, it's like you put a chocolate pecan pie on top of chocolate chip cookies.

Ingredients

For the Crust

  • 2 packages Martha White Chocolate Chip Muffins
  • 1 stick butter softened

For the Pie Topping

  • 3 eggs beaten
  • 1 cup light corn syrup
  • ½ cup sugar
  • 1 teaspoon vanilla
  • ¼ cup melted butter
  • teaspoon salt
  • 1 cup pecans
  • 1 cup semisweet chocolate chips

Instructions

For the Crust

  1. Line an 8-inch glass pan with parchment paper, overlapping on all sides. Coat parchment, sides and bottom, well with cooking spray.
  2. Combine muffin mix and softened butter and mix well until a dough forms.
  3. Press the dough into the bottom of the parchment lined pan.

For the Pecan Pie Topping

  1. Preheat oven to 350 degrees.
  2. Beat together eggs, corn syrup, sugar, vanilla and salt.
  3. Slowly add the cooled, melted butter, being careful not to cook the eggs.
  4. Fold in pecans and chocolate chips. Stir to combine.
  5. Pour into baking dish on top of crust.
  6. Bake at 350 degrees for about 45-50 minutes, until the top is brown and mostly set. (The very center may still be a bit gooey, but it will firm up as the bars cool.)
  7. Remove from oven and allow to cool completely.
  8. Lift bars out of pan using the parchment paper lining and cut into squares.
