Vegetarian Cold Sesame Noodles

These cold sesame noodles are tossed in a spicy peanut butter sauce. They're a deliciously easy lunch or party dish.

  • 1 lb. Chinese egg noodles
  • ¼ cup sesame oil
  • 5 TBS soy sauce
  • 4 TBS rice wine vinegar
  • 4 TBS smooth peanut butter
  • 1 TBS plus 2 teaspoons chile garlic paste such as sambal oelek
  • 4 cloves garlic minced
  • 2 green onions thinly sliced
  • 1 English cucumber peeled,and julienned
  • 2 carrots peeled and julienned


  1. Boil egg noodles, according to package directions, about 5 minutes, until slightly tender.
  2. Drain in a colander and rinse with cool water and drain completely. Transfer to a large bowl and toss with 3 Tablespoons of sesame oil.
  3. In a separate bowl, whisk together the remaining sesame oil, soy sauce, vinegar, peanut butter, chile-garlic paste and garlic.
  4. Pour over noodles and toss with julienned carrots and cucumber.
  5. Refrigerate and serve cold.
  6. Garnish with sliced green onions
