Preheat oven broiler to low. Line a baking sheet with parchment paper.
Slice jalapeño peppers in half, lengthwise.
Use a spoon to remove seeds and membrane from the jalapeño peppers.
Stuff each jalapeño pepper with a heaping tablespoon of pimento cheese.
Broil on low for 5 minutes, or until cheese is melted and lightly browned. Watch the oven closely so the jalapeño poppers don't get too browned.
