Preheat oven to 425° F. Line a cookie sheet with parchment paper.
Allow the pie crust to sit out at room temperature for 10 to 15 minutes, then unroll.
Use cookie cutters to cut out heart shapes from the pie dough. Place cookies on the parchment-lined baking sheet.
Roll out any remaining pie dough and repeat.
Combine sugar and cinnamon in a bowl or shaker.
Brush each pie crust heart with melted butter.
Sprinkle cinnamon sugar on the heart-shaped cookies.
Bake cookies 5-7 minutes until they are golden and flaky, but not burned.
Cool for 5 minutes, then remove from the pan.
Serve with whipped cream and jam.
