2 TBS Dijon mustard ½ tsp. dried dill 2 TBS fresh parsley 1 cup beef broth ⅓ cup all-purpose flour 8 oz. light sour cream 4 oz egg noodles

Cut the beef into thin strips, slicing against the grain & season with salt and pepper.
Dice onion and mince garlic cloves.

Combine the beef, onion, garlic, parsley, dill, mustard and mushrooms in a slow cooker. Stirr well to combine.

In a separate bowl, whisk together the flour and beef broth until free of lumps. Pour over the meat.

Stir again to coat. Cook on HIGH for 1 hour, then reduce heat to LOW and cook for 4 more hours, or until the beef is tender.
