Healthier Slow Cooker Beef Stroganoff Recipe

A healthier recipe for beef stroganoff. It's still stick-to-your-ribs comfort food, but lower in fat and calories.

A serving of this Slow Cooker Beef Stroganoff, including egg noodles, has fewer than 500 calories.

Ingredients 1 lb top round roast  ¾ tsp. salt ½ tsp. black pepper 1 medium onion  2 cups mushrooms 3 cloves garlic  Continued on next slide

Ingredients 2 TBS Dijon mustard ½ tsp. dried dill 2 TBS fresh parsley 1 cup beef broth ⅓ cup all-purpose flour 8 oz. light sour cream 4 oz egg noodles

Cut the beef into thin strips, slicing against the grain & season with salt and pepper.

Dice onion and mince garlic cloves.

Combine the beef, onion, garlic, parsley, dill, mustard and mushrooms in a slow cooker. Stirr well to combine.

In a separate bowl, whisk together the flour and beef broth until free of lumps.  Pour over the meat.

Stir again to coat. Cook on HIGH for 1 hour, then reduce heat to LOW and cook for 4 more hours, or until the beef is tender.

Turn the slow cooker off and remove the lid. Allow to cool for 10 minutes before stirring in the sour cream.

Serve beef stroganoff over egg noodles, rice or mashed potatoes.
