Chocolate Chess Bars

These chocolate chess pie bars feature a fudgy chocolate layer on top of a buttery shortbread crust. They’re a wonderful dessert to serve for the holidays or to take to a cookie exchange party.

This recipe is inspired by the classic southern dessert Chocolate Chess Pie. These chocolate shortbread squares would be great to take to a cookie exchange party.

Ingredients for the Shortbread Crust 2 cups all purpose flour ½ cup confectioner’s sugar ¾ teaspoon salt 1 ½ sticks unsalted butter

How to make the Shortbread Crust 1. Combine dry ingredients in a large bowl and whisk. 2. Cut in butter with a pastry blender until dough holds together 3. Press gently into a 9X13-inch baking dish. 4. Bake 18-20 minutes at 350℉ until the edges brown slightly.

Ingredients for Fudgy Chess Filling 4 TBS cocoa powder  1 ½ cups granulated sugar 3 TBS cornstarch 2 large eggs, beaten 4 TBS melted butter, cooled  5 oz. evaporated milk 1 tsp. vanilla extract

How to make the Chocolate Chess Filling 1. Reduce oven to 325℉. 2. Whisk together sugar, cocoa powder and cornstarch in a large bowl. 3. Add beaten eggs, evaporated milk, melted butter and vanilla. Stir to combine. 4. Pour the chocolate filling mixture over the cooled shortbread crust.

How to make Chocolate Chess Pie Bars 5. Bake for 25 to 30 minutes or until a crust forms and the bars are mostly set. 6. Cool completely on a wire rack before cutting and removing the bars from the pan. 7. Dust the tops of the bars lightly with confectioner’s sugar, if desired.
