ButterscotcH HayStacks No-Bake Cookies

These tasty no-bake butterscotch haystacks are one of our family’s favorite Christmas cookie recipes. Only 3 ingredients and minutes to make.

When you make these  cookies, you need to work quickly. You’ll find that the melted butterscotch cools and hardens pretty quickly.  That’s a good thing because you can eat these cookies just minutes after you make them.

Butterscotch Haystacks are a great recipe to make for a cookie swap party.

Easy to make ahead of time Recipe makes 2 dozen  Easy to double or triple

Ingredients 10 oz. chow mein noodles 1 cup dry roasted peanuts 16 oz. butterscotch chips

Step 1 Line baking sheets with parchment paper or waxed paper.

How To Make Haystacks

Step 2 Measure out the chow mein noodles and dry roasted peanuts.

Step 3 Melt the butterscotch chips in the microwave or over a double boiler.

Step 4 Quickly combine all ingredients in a large bowl.  Stir well, making sure dry ingredients are well coated with butterscotch.

Step 5 Drop by spoonful onto lined baking sheets. Allow to cool and harden.
