The History of the Dark ‘n Stormy Cocktail
While this cocktail look scary and supernatural with the smoke rising from the glass, it’s perfectly safe to drink once the smoke clears. It uses the same ingredients as a traditional Dark ‘n Stormy, namely Goslings Black Seal Rum.
The Dark and Stormy cocktail originated at the Royal Naval Officers Club in Bermuda sometime after WWI. Sailors began adding a splash of the locally made Goslings Black Seal rum to their ginger beer.
The cocktail earned its evocative name after a wizened old fisherman compared the color of the drink to the “color of a cloud only a fool or dead man would sail under.”
This cocktail is sometimes called a “Safe Habor” if it uses ingredients other than Goslings brand.
Ingredients & Equipment
To make this Dark and Foggy Halloween Cocktail, you will need:
- Dark rum
- Lime juice
- Ginger beer
- Lime wheels, for garnish
- dry ice (see below for safe handling instructions)

This recipe makes one cocktail.
- Add the dark rum and lime juice to a highball glass or copper mug. Stir to combine.
- Next add the ginger beer, leaving at least 2 inches of room at the top of the glass or mug.
- Carefully place a ½-inch cube of dry ice into the cocktail. Wait for the cocktail to finish smoking before enjoying.
- Regular ice can be added after the dry ice has dissolved, if desired.
- For an even spookier presentation, add one of these DIY Halloween cocktail stirrers to each glass when serving.
💭 Tips & Tricks
- If you would like to be able to drink the cocktail while it is smoking, place a small cube of dry ice in a tea strainer and close it securely. Place the tea strainer with the dry ice at the bottom of the glass and continue with the recipe as written.
- Because of the carbonation, dry ice will make the ginger beer foam and bubble more than usual. Make sure not to fill your glass too high or you’ll end up with a mess!
- Dark rum is what makes this drink a “dark” and stormy. Feel free to swap it for vodka to make a spooky Moscow mule.
- Try this cocktail with muddled blackberries for a bit of sweetness and call it a “Haunted Graveyard Smash.”
Dry Ice Safety
Always handle dry ice with caution.
- Never touch dry ice with your bare hands. Do not store dry ice in a sealed container.
- Do not ingest dry ice. Wait for the cocktail to stop smoking and for the dry ice to dissolve completely before drinking. You can also enclose the dry ice in an enclosed tea ball strainer, as explained above.
- Always consult a safety data sheet before handling chemicals.

- I’m using Goslings dark rum in this cocktail.
- I recommend freshly squeezed lime juice for the best flavor!
- Ginger beer adds a bit of spice and effervescence to the cocktail. I like Fever Tree brand, but any brand will work. Just keep in mind that ginger beer is not the same as ginger ale!
