  • 1 Tablespoon olive oil
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 large carrots, sliced
  • 1 cup green beans
  • 1 15 ounce can cannellini beans
  • 1 zucchini, diced
  • ½ head savoy cabbage, shredded
  • 1 24-ounce jar RAGÚ Chunky Tomato, Garlic and Onion Sauce
  • 4 cups chicken or vegetable broth
  • 8 ounces elbow macaroni

  1. Heat olive oil over medium heat in a large stock pot.
  2. Add onion, celery, carrots and green beans and saute for 3 minutes, until softened.

  6. Bring to a boil, then reduce heat and simmer for 10 minutes until vegetables are tender.
  7. Add pasta and bring pot to a boil, stirring frequently to prevent sticking. Cook for 10 minutes, until the pasta is al dente.
  8. Next, add zucchini and cabbage and cook for 3 to 5 minutes more, until zucchini is tender and cabbage is wilted.
  9. As it cooks, the pasta will absorb the cooking liquid, so it may be necessary to add more broth or water to thin the soup.
