Fresh, healthy and protein packed, this corn-and-black-bean salad pairs well with tacos. It's also a great healthy option for a potluck or cookout.

  • 1 can black beans, drained
  • 1 can yellow corn, drained
  • 1 bell pepper, diced
  • ¼ cup green onion, sliced thinly
  • 1 tablespoon fresh parsley, chopped
  • Juice of one lemon
  • Dash of cumin
  • Salt to taste
