I’m calling this first cocktail the Carolina Blue Belle because it’s made with peach vodka, blue Curacao and lemon-lime soda.

You can add more soda if you prefer a lighter, weaker cocktail.

Carolina Blue Belle Cocktail

This refreshing, Carolina blue citrus and peach cocktail is a great summertime sipper.

Serves: 1 cocktail
Ingredients
  • 2 parts peach vodka
  • 1 part blue Curacao
  • 3 parts lemon-lime soda (or more to taste)
  • crushed ice
Instructions
  1. Fill a Tervis tumbler with crushed ice.
  2. In a cocktail shaker, combine vodka and blue Curacao. Shake or stir until combined.
  3. Pour over ice, then top with lemon-lime soda

If you’re having a large crowd over to watch the Tar Heels play, you can make a batch of these blue cocktails, or whip up some blue party punch.

Fruity and tart, this blue punch can be spiked with vodka or light rum, or it can be served without alcohol.

If you don’t want to use pineapple juice, you can substitute lemon-lime soda. But I really love the tropical tang it gives this punch.

The easy Carolina blue punch has a tart, fruity flavor. It's delicious as a non-alcoholic beverage or spiked with vodka or light rum.

Serves: 10 8-ounce servings
Ingredients
  • 6 cups blue raspberry Hawaiian punch
  • 12 ounces frozen lemonade
  • 2 to 3 cups pineapple juice
  • vodka or rum (optional)
Instructions
  1. In a large pitcher, combine the blue raspberry punch and the frozen lemonade.
  2. Stir until the lemonade is thawed and fully incorporated.
  3. Slowly add the pineapple juice, being careful not to add too much or it will turn the punch aqua instead of blue. If this happens, you can add more blue raspberry punch.
  4. If desired, add alcohol.
  5. Serve over ice.
