Once a month, a family of local cheesemakers invites customers to their farm to enjoy gourmet, homemade wood-fired pizzas. A pie from one of those gatherings inspired this strawberry bacon mozzarella flatbread pizza recipe.
As soon as I bit into that first slice, I was hooked. I knew I wanted to recreate the flatbread pizza recipe at home.
The flatbread is brushed with a sauce made from strawberry jelly and pepper jelly, then topped with fresh mozzarella, smoky bacon, ripe strawberries and fresh basil.
It’s a wonderful marriage of savory and sweet.

How can I serve flatbread pizza?
I’ve made this quick flatbread pizza recipe several times this summer. I paired it with a green salad for a quick, easy and fresh dinner.
If you’re looking for flatbread appetizer recipes, this is definitely a contender. With the unusual combination of ingredients, it feels fancy and gourmet. But it’s beyond easy to make because you don’t have to make the flatbread pizza crust from scratch. Who doesn’t love a kitchen shortcut?
I used a store bought refrigerated flatbread dough from Wewalka for this strawberry bacon flatbread pizza recipe. (We also love their pizza crusts.)
Do I need to bake my flatbread crust before adding toppings?
The answer to this question really depends on the recipe you are using.
Some flatbread pizza recipes do require you to bake the crust first. But others are prepared more like pizza, with everything baked together. If you prefer a really crispy flatbread, then I would pre-bake the crust. But if you don’t mind a little chewiness, then you don’t have to worry about pre-baking the crust.
For this particular recipe, I do recommend baking the flatbread crust for a few minutes before adding your toppings. Baking the crust for about 7 minutes in a 425-degree preheated oven until lightly browned and crispy. This will ensure the crust remains crispy under the weight of the toppings and the jelly sauce.
I’ve made it both ways, and we prefer it with the crispier crust — so that’s how I’ve written the recipe.
Anything else I need to know before making this flatbread pizza recipe?
For this recipe, it’s also really important that you use a rimmed baking sheet to cook the flatbread. Otherwise, the pepper jelly mixture may run off the baking sheet pan and make a mess in your oven. And you don’t want to be cleaning an oven in the heat of summer! (Ask me how I know this!)
So, let’s get on with the recipe. As I recommended above, pre-bake the flatbread pizza crust on a rimmed baking sheet for about 7 minutes at 425 degrees. If you use the Wewalka brand, as I did, unroll the crust and leave the parchment paper underneath the dough. It’s safe to put the parchment in the oven on top of the baking sheet.
Once the pre-baked crust has cooled slightly, brush on a thin layer of strawberry and pepper jelly. You don’t need much, just enough to cover the entire crust with a light coating. I use a silicone basting brush.
Next add slices of fresh mozzarella cheese.
Layer on fresh strawberry slices.
Sprinkle on bacon crumbles.
Finish by adding fresh basil leaves.

Ooh, that video is making me so hungry! Good thing this only takes a few minutes to bake, just long enough for the cheese to melt and the flatbread to brown slightly.
About 7 or 8 minutes in a 425 degree oven is all you need.
When you pull it out of the oven, the cheese will be all oozy and the flatbread with be light brown and bubbly.
I always add some more fresh basil leaves for a pop of green since the herb discolors when it bakes. Then use a pizza wheel to cut the flatbread into slices — 8 if you’re serving for dinner, 16 if you’re serving as an appetizer.
And yes, the strawberry bacon flatbread pizza tastes as good as it looks!
Strawberry Bacon Flatbread Pizza
Ingredients
- 1 flatbread pizza crust
- 1/8 cup strawberry jelly
- 1/8 cup pepper jelly
- 6 ounces fresh mozzarella
- 3/4 cup strawberries sliced
- 4 slices bacon cooked and sliced
- fresh basil leaves
Instructions
- Preheat oven to 425 degrees.
- Roll out the refrigerated flatbread crust onto a rimmed baking sheet, leaving the parchment underneath. Bake for 7 minutes, until crisp and lightly browned.
- Allow the crust to cool slightly. Mix together the strawberry jelly and pepper jelly and brush onto the flatbread crust.
- Add sliced fresh mozzarella to the crust.
- Arrange sliced strawberries on top of the flatbread pizza, then sprinkle on bacon slices.
- Add fresh basil to the top of the flatbread pizza.
- Bake at 425 degrees for 7 to 8 minutes, until cheese is melted and the flatbread crust is browned.
