I love guacamole. But I’m the only one in our house that does.
And guacamole is one of those dishes that is best served fresh. Leftovers just don’t cut it. Because once air hits an avocado (even when it’s mashed up in guacamole), it starts turning brown. The color change doesn’t affect the taste. But it’s not very appetizing. So, I’m faced with eating the whole batch of guacamole, throwing a fiesta or throwing the leftovers away.
But then I stumbled onto an amazing discovery.
You can freeze avocados.
Or better yet, you can make Fresh From the Freezer Homemade Guacamole.

Start with one ripe avocado, minced garlic (how much is up to you), salt, a lime and some salsa.
Slice the avocado in half and remove the pit, leaving the avocado skin in tact.
In a separate bowl, mix together the garlic, salt, salsa and a little freshly squeezed lime juice.

Spoon the mixture into the avocado hull, and squeeze more lime juice over top.
Wrap tightly in plastic wrap and store in a zip-top bag. Or better yet, use a food sealer and toss into your freezer.
When you’re ready for a snack, pull your guac-acado out of the freezer and thaw. Mash up the avocado and the other ingredients.
Then dip a chip.

I’ve just recently learned to love guacamole. Hubby still doesn’t care for it though. This looks like an easy and yummy way to enjoy it any time that I want to!

I’m going to have to try this! I’m a total avocado freak, but like you, no one else in my family is.
